Curried Split Pea Soup |
| Ingredients: |

olive oil |

1 medium |
|
white onion, cut into 1/4 in dice |
| |
3 cloves |
|
garlic |
| |
2 Tbs |
|
fresh ginger, minced |
| |
2 tsp |
|
curry |
| |
1 tsp |
|
cumin |
| |
1/4 tsp |
|
coriander |
| |
1/4 tsp |
|
cardamom |
| |
1 generous pinch |
|
cinnamon |
| |
2 tsp |
|
salt |
| |
8 c |

water |

dried split peas |

| Directions: |
| |
In a stockpot, sauté onions in oil over medium heat for about 5 minutes. add garlic, ginger, spices and salt. sauté for two more minutes.
Add Water and stir well. add slit peas. Cover and bring to a boil.
Bring heat down to medium; simmer for an hour,or until peas are tender. Grate in carrot and serve. Garnish with cilantro, if you have it on hand.
