Festival is a fried cornmeal dumpling shaped into long fingers. It's a traditional accompaniment to 'Jerk' dishes like Honey-Jerk Chicken. |
| Ingredients: |

1 cup |
|
yellow cornmeal |
| |
1 cup |
|
flour |
| |
2 tsp |
|
baking powder |
| |
3 tbsp |
|
sugar |
| |
1 tsp |
|
salt |
| |
1 |
|
egg |
| |
1/2 cup |
|
ice water |
| |
2 cups |
|
oil for frying (I like peanut oil) |
| Directions: |
| |
Mix everything together and add only enough ice water to get a soft dough, yet manageable with your hands. Scoop up a couple tablespoons of dough and roll between your palms until as long as your palm and about 1/2 inch wide. Drop into hot oil (about an inch deep) and fry until golden, turn and cook a total of about 1-2 minutes. Drain on paper towels. Serve immediately.
