Sauteed Zucchini and Mint

olive oil |

minced garlic cloves |

zucchini, cut into rounds |

1/4 cup |
|
orange juice |
| |
1 tbl |
|
red wine vinegar |
| |
1/4 tsp |
|
sea salt |
| |
1/4 tsp |
|
grated orange zest |
| |
3 tbl |
|
chopped mint |
| Directions: |
| |
Heat oil. Saute the garlic until fragrant, about 30 seconds. Add the zucchini, cook until softened, about 5 min. Stir in the orange juice, vinegar, salt and orange zest; cook until the liquid is slightly thickened but hasn't evaporated, about 2 minutes. Remove from heat and stir in mint.
