Super Powered Tacos

Add veggie purees to beef mix and don't worry about what the kids are (or aren't) putting on their tacos. |
| Ingredients: |

super lean ground beef |

1 cup |

shredded cheese |
| |
1 pkg |
|
taco seasoning |
| |
1 cup |

shredded lettuce |
| |
1 cup |
|
tomatoes, diced |
| |
1/2 cup |
|
canned crushed tomatoes |
| |
1/2 cup |
|
carrot or butternut squash puree |

Make tacos as usual, but instead of using water for sauce mix substitute in the crushed tomatoes and veggie puree. The texture is a little different than normal, BUT good and easy to get used to. If kids don't like change, try it with just the crushed tomatoes - blends more thoroughly. Or use a red pepper puree with the crushed tomatoes, also blends nicely.
Freeze purees and pre-cooked meat in premeasured quantities to make prep easier.
