Vegan Navy Bean Soup

Navy Bean (small white) Soup with potatoes and carrots. |

dried navy beans |

|
yellow onion |
| |
6 cloves |
|
garlic |
| |
5 cups |
|
vegetable broth |
| |
1 leaf |
|
bay |
| |
2 tbsp |

vegetable oil |
| Directions: |
| |
saute diced onions in oil over med heat, add garlic. add broth, beans and bay leaf, bring to boil. simmer for 2 hours. add chopped potatoes and carrots, salt and pepper to taste. cook 20 min more until potatoes are soft.
